Mat, for you back seat have a look around for a rock'n'roll seat mechanism.
A lot of people have them.
Ask in the Anything Wanted section and have a look around your local VW wreckers.
If there's a Bay camper with one it works fine.
That way you can pull the middle seat out and sleep in it when you go camping.
Bay middle seats fit well.
I have 2.......a standard flipside 3 seater and another that was cut down to a 2 seater.
As to the engine cost I know your pain......I too started with a 1600dp.
Consider looking around for a set of Kadrons.
They work as well as a single Webber system if not better.
Plus if you get a 1776 or 1835 later on you can still use them or sell them to trade up to a set of Webber IDFs.

I'm not much of a camper either but it's nice to be able to sleep in your bus if you travel aways to an event.
But, hey, if you want original, go for it.
I suspect though that you'll be looking a while for an OG middle seat.
They were a little too easy to pull out and stow in the garage or shed.
Then when the bus was sold on they didn't go with it and the seat was eventually tossed out.
Again, if you're after one put a post in Anything Wanted and watch the Parts For Sale section
