Ryan mate I push 120-135c on really hot days like 40-45c+ ambient when I drive to melbourne in late november every year in the 356. I find that as long as you change the oil every 1500-2000 miles and whenever you have given it an extended thrashing at high heat with fresh oil like on my return melbourne runs, all seems to be o.k. Hope this helps mate.

My 1600 ran at 110c all the way back from Perth to Melbourne via Nowra. It was 40 degrees plus every day for a week (45 in Ceduna). I was sitting on about 90kmh with not much pedal to the metal. My mechanic reckons that is good as it boils away any moisture that may have condensed in the sump. My car used 500mls of oil in all that trip, nearly 5000kms. To say I was pleased is a big understatement. The motor is only about 25,000 km old from a full reco so it should have performed well. I dunno if old Ferdi had those exterior temperatures in mind when he designed the motor but.
Or maybe he had the conquest of Africa in the back of his mind all along.

Most vw's i know run at about 110C, i dont usually let mine go over 125C.External coolers are great but i like to see a thermostat in there to keep it at operating temp all year round. if the oil is too cold it builds up more pressure causing the releif valves to open reducing the flow to the bearings!
