It was cool to meet up at DOVW.
That roof looks serious.
I reckon I'd get out the sandblaster and hit the inside and outside of the gutters to see how bad that rust is.
I'm dead certain twinfin did the roof on his Double Door Panel and he's in Vic.
Klaus should be able to give you some pointers on this too.

Those are the Autocraft panels and they are fantastic. The inner support channels you can probably fab up yourself, but the corners are just too cheap (from AC) so you might as well order those. The side outer roof sections you can fab as well (very slight curve).
You have knocked out the rest of the bus and I'm sure you can do the same fantastic job on the roof! I think you could easily turn it into a 23 Window!! (Kidding).
Obviously I vote to fix the sections bit by bit. The only way I would tackle the whole roof is if you had a nice donor roof (complete) OR if your current roof is oil canned/damaged in the middle or the bows are damaged... then I would opt for a Dormy top or a sunroof etc.
I would put the bus right down on the floor (that's what I did) and it made the roof work easy.
